Tré Huế là gì?
Nghe tên thì mọi người sẽ không hình dung được đây bánh hay kẹo hay món gì.Thật ra tré là một món ăn được làm từ thịt, có hình dáng tương tự như nem chua nhưng lại khác hoàn toàn nem chua ở khâu chế biến. Nguyên liệu chính gồm Thịt đầu heo: tai, mũi,Da heo, Thịt bò (đối với tré bò), Thịt ba chỉ heo ram,Ớt,Thính gạo hoặc thính nếp rang, Bột ngọt, đường, Lá ổi hoặc lá đinh lăng,Tỏi, Riền, Mè trắng rang…
Tất cả phần thịt đều phải được làm sạch, luộc chín. Thịt ba chỉ thái sợi rồi ram lên cho cạn nước, se thịt, để nguội. Tai, mũi, da heo cũng thái sợi. Chú ý phần da heo phải thái mỏng và đều tay. Đây là bước kỳ công nhất của món ăn.
Các gia vị còn lại gì giã nhỏ, băm nhuyễn, trộn đều với nhau, ớt khô thì phi thơm cùng dầu điều. Tiếp theo trộn phần thịt với phần gia vị thật đều tay, bỏ vào hộp thủy tinh kín cùng với lá ổi hoặc lá đinh lăng và để nơi thoáng mát.
Sau 2-3 thì tré sẽ có mùi hơi chua, lúc đó tré đã có thể bỏ ra và sử dụng. Nên cất vào tủ lạnh sau khi mở nắp hộp để đảm bảo độ chua của tré. Tùy khẩu vị mỗi người mà có thể tăng giảm gia vị.
